Well after coming in by £10 up in the March challenge *woop* I want to see if I can come in at £225 this month... there is only 2 of us and a couple of animals, surely i can get it in there??... so put me down for £225 please. I wasnt supposed to be having these for my dinner tonight but on sorting through the fridge this morning I found a rather sad looking butternut squash so changed my mind. Thet were rather nomnom even if I do say so myself.
SPICY SQUASH CAKES
200G SQUASH
20G POTATO
1 EGG
1/4 TSP CORRIANDER
1/4 TSP ALLSPICE
1 TBSP FRESH CORRIANDER
2 SPRING ONIONS (OR A CHUNK OF ORDINARY ONION)
DRIED CHILLI FLAKES - I USED CHILLI IN A TUBE STUFF
1 TBSP WHITE WINE VINEGAR
1 TSP SUGAR
2 TSP TOMATO PUREE
SEASONING
1. peel and chop veg - cook until tender
2. hard boil the egg
3. drain veg and rinse in cold water to make it umm.. cold! Then mash.
4. peel and chop the egg - add to pots and squash along with herbs, spices and seasoning - mix and shape into 4 small cakes/burgers
5. heat a frying pan with a little oil and lightly fry the cakes - about 5 mins either side.
6. Meanwhile mix chilli, vinegar sugar, puree and 2 tbsp cold water together to make a chilli dipping sauce.
Been back to Aldi for 2 more packs of 49p red grapes - 3DSs have eaten half a box between them tonight!!

I've been and stocked up on everything I need for the month and spent £14.14 in Holland & Barrett, £18.14 in Lidl and £29.38 in Tesco = £61.66 so far. All I need to buy is fresh fruit & milk over the rest of the month so I'm hoping I'll be on budget.

Went shopping yesterday morning and spent a whopping €147.08 of my April budget...hopefully only milk, fruit and veg to buy and maybe a couple of meat dinners...if it is not there they can do without for April, fed up spending so much money!
