    I had a glut of carrots the other night, so made carrot and coriander soup. Chopped 500g carrots, 1 small onion, softened in 1 tablespoon of olive oil with a heaped teaspoon of dried coriander. Chucked in HM chicken stock and simmered till carrots were mush. Whizzed in blender, served with a teaspoon of yoghurt.

    I'm trying to cut down *pokes tum* :) and soup/smoothies keep me full up for longer :D

    Well, when I buy a chicken I chop it up, freeze the legs, breasts & wings for later. Roast the carcass (sp?), then boil it in water. The amount of chicken that comes off is amazing! Then I save the water as stock.
    Thou chicken or veg oxo cubes would prob have the came affect!

    I suppose the chicken would be fine to freeze after, I never really listen to the 'don't freeze more than once' guideline. As long as it's cooked thru & piping hot it should be fine.

    Love lifer - I'd like the lentil soup recipe if you wouldn't mind posting it. Lentils are yummy and very filling.

  • heres the one i use- but theres loads around you could look at. this tastes better than you'd expect, its cheap and store cupboard ingredients. perfect for cold weather too. enjoy

    6oz red lentils
    1 onion
    2 pints stock
    1 tbsp tomato puree
    i teasp yeast extract
    i tbsp lemon juice
    salt, pepper, parsley

    put lentils in large pan with stock, onion (whole) and salt. bring to boil and simmer for about 20 mins. cool and remove or leave onion. liquidise.
    reheat and season with tomato puree, lemon juice yeast extract and pepper. add more water if desired for consistency. serve with parsely (optional)

    That sounds great. I'm just writing the list for tesco/l idle later. I'm tempted by one with potato, celery, carrot and mushrooms. I'll have a look at the Heinz big soup selection for ideas. How long will soup (mainly vegetarian) keep for in the freezer? And would tomato soup work or would it just taste like warm tomato juice?

  • Hi there Danni - does garlic affect your Crohns as well as onion etc ? Just wondering if you could substitute that if not.

    Two tips for budding soupmakers - invest in a wand or stick blender - you can get decent ones for under a tenner - not every soup you make needs to be pureed but wand blenders are a quick easy unmessy way of doing it ! plus make excellent smoothies, shakes etc for a fraction of shop cost ;)

    Secondly - my magic ingredient is Swiss Marigold Bouillon powder - is veggie and I believe you can get vegan and low salt versions - imo just the best stock maker ever tastewise - even if making your own stock, it's worth sprinking a bit in for added oomph. It isn't as cheap as the normal stock cubes etc but is very good value for money.

    Hi

    I have recently made a lot of changes to lifestyle, have bought slowcooker, breadmaker, have cut shopping bill, have lost a stone in weight and I feel so much better about life in general.
    I think I am reaching a bit of a sticking point foodwise and have previously tried to make soup, both for moneysaving and healthy eating reasons, but it was a disaster.
    I love my salads but as the weather is turning cold something warm would do me the world of good and lift me up a bit I think.

    Could you all post me some recipes and instructions for how to make the perfect soups, would love slow cooker ones but no too bothered either way as long as they are tasty.....

    I've been Money Tipped!
    This one is an all time fave in our house and my two boys (2 and 5) regularly demand it!!
    Chop an onion, fry gently in olive oil, add diced carrot, diced courgette, diced pork, stock, tin of baked beans and a handful or two of pasta, any small shape will do ... add a stock cube ... (in fact I tend to use just half and that's plenty) simmer for a good hour ... voila! Delicious!

    couple good hanfulls red lentils
    veggie stock
    mild curry powder

    Place it all in the slow cooker and fill up with water leave to cook for as long a possible then give it a wizz with a hand blender or in a food blender............voila!! spicy carrott and lentil soup YUMMY with HM bread:T

  • Fry an onion gently for 10 mins in some butter or oil. Add 225g of red lentils and cook for a minute or two. add about a litre of stock (pref bouillon) and cook for about 20 mins till lentils are done. delicious and healthy and it really is that simple!
