    Hi Pobby,

That soup sounds lovely. I've added your recipe into the main soup thread so that other Old Stylers can find it easily.

is Delia Smith's minestrone recipe and is a cracker I reckon.

Another good one is tomato and basil soup:

Roast a couple of pounds of tomatoes, a red pepper, an onion and 2-3 cloves of garlic in the oven together for about 40 mins. Take it out and whizz it for a bit until smooth. Add to a pint of stock and then sieve to get the seeds and bits of tomato skin out. Gently reheat and rip up some basil to put on top.

The secret to good soup is good stock IMO. Best to make your own if you can. It's very cheap to do if you keep the trimmings from a roast and veggies to make it with.

Strange this thread should come up as we too had Chicken for tea and after removing every scrap of meat that I could.I broke the carcass into pieces and threw it into a pan covered it with water and boiled it for a couple of hours.I've strained it and removed the bones and left it in a cold place overnight and tomorrow I will skim the fat off the top and hey presto chicken stock

  • Hi,

If you ever boil a joint of ham, the stock, together with some veg and lentils makes an excellent soup - especially if you add some of the trimmings from the ham too.

Just the job with a chunk of still warm bread from a BM on a cold day.

(Just make sure the stock isn't too salty though!)

    Happy New Year,

    Regards,

    White.
