    As I recently posted on the lose weight thread, I am starting a diet feb 1st with a target of 8 stone weight loss :eek: :eek: :eek: :eek: :eek: :eek:


    Have been getting knowledgable and prepped because I have never prepared meals OS before.

    Have recently made a big batch of veggie soup and found it was easy, tasted lovely and was filling for very few calories.

    Have made variations of veggie soup twice over last few weeks but want some new ideas.


    Can anyone recommend some OS soup recipes? I need them easy, cheap to make and low in calorie. Would really appreciate some suggestions xx

    If you lend someone a tenner and never see them again, it was probably worth it.
  • I made some chicken & veg soup with the leftovers from my chicken dinner on sunday and got about 3 portions out of it.

  • Pumpkin soup - my mother's recipe.

    My mother had a mountain of pumpkins to deal with (my Dad grew them and got a bit over-enthusiastic!)

    Chop pumpkin or squash into cubes about 2 inches on each side. Enough to cover a large roasting tin. And a peeled onion, chopped into 4, and 2 cloves of garlic, whole and peeled. Sprinkle with fresh thyme and rosemary. Pour a smidgeon of oil on top, and roast in the pre-heated oven for 50-60 minutes.

    Take it out, add a tin of reduced fat coconut milk and a teaspoon of curry paste, and stick in the blender.

    Depending on the thickness, add some veggie stock to let it down.

    It's a wonderful recipe, we all love it. Just as well, as my mother has 50 pints in the freezer!

    I recently made roasted tomato and butternut squash soup but it turned out very sweet :confused:, can anyone tell me how to stop the soup tasting so sweet without adding loads of salt?

  • A bit of vinegar would balance it out, I reckon. Not malt vinegar, though! Or, if you aren't veggie, some Thai fish sauce.

    I have rice wine vinegar - would that do? I have fish sauce too :-) bit wary of it was heavy handed with it once and result was inedible.
