Glad it was good - you dont need recipes for soup = anything goes especially left over lurking in the dark bits of the cupboard/fridge etc. Look forward to making more eh! Soup is a cheap and cheerful meal = add cooked chicken to make a meal of it and with homemade bread its fab - In the winter we have home made soup with home made pancakes for lunch on sundaysSaving in my terramundi pot £2, £1 and 50p just for me! :j0

Last winter I had a go at making soups and did ok. Now the weather has turned colder I've started making soups again. I wanted to not follow a recipe so that I could make it up as I go along, but did look at some recipes online just to see what kind of spice/herb goes with the veg.
Yesterday I made a spicy carrot soup using curry powder as the spice and today I've made a lentil soup with cumin. My 8 year old son has always maintained he didnt like soup, but because I had "homemade" it he gave it a try and actually said he likes soup now - yippee. He had a bowl of soup, jacket potato and home made rice pudding, all of which was made from leftovers in the fridge or leftover packets of rice/lentils in the cupboard!
Its basically just a case of "sweating" the veg, adding stock/water, leaving to simmer for a while and then putting it in the blender if you have one. You can always add more spice/salt etc after blending if it needs it. Now's the time of year to get some tummy-warming soup inside you. I have this quick and simple idea which rarely goes wrong:
1 each carrot, potato, onion, garlic clove.
Boil until soft and then mash or puree IN the cooking water. According to individual taste, you can leave larger or smaller pieces.
Crumble in half a stock cube and bring to simmer again for a few minutes.
This is such a simple recipe and readily accepts any changes/other ideas you might have - adding other herbs, vegetables, meat etc. It can be a meal in itself if accompanied by good, thick slices of a quality bread.0 -
Fab idea! Known as *fridge bottom* soup in our house, and we've had lots lately, using turkey stock. Good with swede, parsnip, pumpkin, celery, cabbage, leek, too.

Yes, it's a great 'combiner'. If you've already got some turkey or vegetable stock to do the cooking in, so much the better and tastier.0

one of my faves, which i'll make for tonight, is squash, carrot, sweet potato. probbaly chuck in a parsnip too. a bit of cumin and coriander is nice in there. i always use an onion too, and a stock cube.
edit: i've found that adding some Thai 7 spice powder makes the soup lovely. it works with any of the 'sweeter' veg but especially with squash, adding a bit of chilli too gives it a gentle kick!Mum to gorgeous baby boy born Sept 2010:j0 -

We have one of those blending tools with like a whisk on the end , Does anyone have any good soup recipies that we can have as I want to use the blender/whisker like you would use a chainsaw and produce some lovely home made soups
