I'm on the committee for my son's pre school and we are having a charity race night and I have been asked to make a dessert for the meal. Any ideas of something that looks delicious but costs not very much! It would preferably be a cold dessert. Any ideas would be gratefully received. It's sortedI'd go for something seasonal, too. How about rhubarb crumble, or some sort of muffins

My son (now 3) helps in the kitchen and one of his jobs is to smash the meringues.0 -

Well done for starting to cook from scratch.
Just a word of warning-if you are feeding you 10 month-old the same food as what you are eating, just be careful of the salt content in the food.
Try to add most of your salt to the food, after you have taken out a portion for the baby.Felines are my favourite

How about this Lemon Pudding. I made it the other and is totally delicious, really light. The sponge rises to the top leaving the soft pudding underneath. LEMON PUDDING CAKE
3 eggs
2oz (50 g) butter or margarine
3oz (75g) sugar
Grated rind 1 lemon
2 ½ fl oz (75ml) lemon juice
8 fl oz (225 ml) milk
1 oz (25g) plain flour[FONT="]
[/FONT]
[FONT="] [/FONT]Preheat the oven to 180C (350F) In a mixing bowl, beat the whites of the eggs until stiff, and cover with plastic film or foil.[FONT="] [/FONT]In a separate bowl, cream the butter and sugar until light and fluffy. Beat in the lemon rind, lemon juice and the egg yolks, one of a time, until well mixed. Beat in the milk, then the flour until blended.
Fold the beaten egg whites into the lemon mixture, then pour into a greased 8in shallow ovenproof dish. Set the dish in a large pan; pour hot water into the pan to come halfway up the sides of the dish.; Bake for 35 mins. Serve warm or cold.
