cheap tasty puddings

hi im fairly new and thanks to a few helpful ladies here i have just changed my way of cooking from convenience foods to proper home cooked meals...
i was determined to give my son the best start on life he is 10 months old and adores the meals iv tried so far....
weve had spag bol, tuna pasta bake, potato melt, hm pizza, and loads more
but now im up and running on meals id like to make some puddings as i give him a pudding after every meal which so far is a biscuit or fruit or youghurt but i quite like the idea of making my own puddings for him..... also my dh who is loving the change of food so far and is encouraging me 2 try more

    bit new to all this myself so cant do links or anything, but there were 2 great recipes i have tried from here that my kids love. one was weetabix brownis and the other was apple braid.
    sure some kind soul can take pity on us and do a link to these?
    Dear Lord,so far today i am doing alright. i have not lost my temper, been selfish or rude.i have not cursed,whined or eaten any chocolate. HOWEVER, i will be getting out of bed in a minute and i will need a lot more help after that...amen

  • forgot to add...... i dont know whether you have a book shop called the works where you are but i got an excellent book today called "the baking cookbook" for about £2-3. its full of cakes, puddings, biscuits and other yummy stuff. all really simple, made with the same sorts of baking ingredients.
    i recently found the inner baker in me and have started making bread, cakes, brownis and biccies. the initial set up to get all the ingredients may be a bit off putting but they are all cheap if you get own brand and when your son is older he can help you bake!

    2 oz pudding rice
    1 pint milk
    1 oz caster sugar
    Freshly grated nutmeg
    Butter - small bit to dot over

    wash rice (in a sieve) place in a dish and cook, with nutmeg grated over and dotted with butter at gas mark 2 for 2 hours (ish). There is enough rice! (ask me how I know..:rotfl: )

    I tend to replace some milk with a can of evaporated milk for extra creaminess

    One of my family favs is meringue,(you could make them yourself but i buy 8 nests for around 80p from tescos), a tin of strawberries in their own juice, drained & purreed, pour this into the baskets & top with yoghurt or ice-cream then drizzle more puree over the top.
    My youngest wont eat fruit, but loves my special sauce:rotfl:

    Banana Bread

    8oz S.R Flour + 1 tsp baking powder
    3oz Butter or Margarine
    4oz Sugar
    2 Eggs
    2 or 3 Bananas roughly mashed (older bananas are very good for this)
    Optional 2oz nuts or 2oz raisins.

    Roughly cream butter and sugar.
    Beat in eggs
    Add mashed bananas
    Stir in the flour and any other ingredients.
    Pour into a lined 2lb loaf tin and bake at 170º
    for up to1¼hours.

    Check after 45 min. It’s done when a skewer comes out clean.

    Serve with cream, evaporated milk, ice-cream or my favourite - custard - 12p for a packet of instant from Netto makes 3/4 pint with boiling water.

    What about banana custard..just custard mixed with fresh banana and the kids love it...or cornflake buns (a great easy make with the kids):D . I also love natural yogurt mixed with honey. If you want a simple sponge then this is the recipe I use :j
    4oz sr flour
    4oz caster sugar
    4oz marg/butter
    2 large eggs

    cream the sugar and marg together ..add beaten eggs then the flour.
    You can cook this in the microwave in a plastic pudding bowl and it cooks in minutes. You can put 3 or 4 tbsp of golden syrup in the bowl first (save the ones from christmas puddings as the size is perfect!) :D or jam or fruit. If you use apples then you have an eves pudding:D .If you want to cook it in the oven then pre heat to 180'c and cook for about 20 mins.A simple jam sauce can be made by heating up some jam and adding a little water to make it the correct consistency.:T But this and custard is always a hit in our house!!!!

    when my daughter was the same age as your little one her favourite thing was fruit sponge it really easy and simple to make i was not an oser then but you can change it to os by using frsh fruit and making your own sponge mix.

    Fruit sponge
    1 tin of apples
    1 sponge mix
    small amount of sugar

    all you do is place the apples in the bottom of a cake tin with a little bit of sugar sprinkled on top.
    then make the sponge mix as directions on pack pour ontop then cook in the oven till golden.
    its so yummy and works for all types of fruit i did a summer berries one the other day and it disappeared in seconds.

    You can't beat a good bread & butter pudding.
    And there are loads of twists on that.
    Jamie Oliver's advertising one at the moment made from hot cross buns, sliced in half and spread thick with marmalade, then pour custard over the lot, let it soak in a bit and bung it in the oven.
