Recipe for Rock Cakes?

Hi all,

Has anyone got the recipe for rock cakes? I used to make them as a child, but have forgotten some of the ingredients, also is there anything else i could put in them, as my other half doesnt like fruit, any suggestions, nothing too "faffy", i actually dont enjoy cooking, and i`m not that good at it, i`d rather have a hoover in my hand!:rotfl:

    My rock cake recipe is just this...

    6oz S/R flour
    3oz marge
    2oz sugar
    1 egg
    pinch of salt
    2oz currants (or 2oz cherries or dessicated coconut
    some mixed spice if you like it..

    rub the marge into the flour as you would for a crumble mix, add the rest of your ingrediants, mix with the egg and a little milk to a stiff mix, and then spoon onto a greased baking tray and pile them up with a fork..
    bake for 15 to 20 mins till golden brown... YUMMY

  • Make big ones, decorate with 2 half cherries for eyes and 3 blanched whole almonds for teeth, and you have Yorkshire Fat Rascals

    I can't see why you couldn't use chocolate chips if you are making for someone who does not like dried fruit?

    Not done these for years..............

    got a batch in right now - I got 9 out of my mix. Not sure If I've made them slightly too big - the proof will be in the eating!

    Let you know OH's verdict when they've cooled down - IF he allows them to cool down that is!!
