Recipe for Rock Cakes?

    The receipe that I use is:

    Ingredients
    8oz SR Flour
    4oz margarine
    3oz sugar
    6oz mixed fruit
    1 beaten egg
    2tbs milk

    Method
    Rub the margarine and flour until like breadcrumbs.
    Rub in sugar and mixed fruit
    Mix beaten egg and milk
    Place about 10 spoonsize portions on a greased baking sheet (leave cakes rough on top and don't smooth over)
    Cook at 150* for about 15mins until golden brown

    Eat when cool!!!:rotfl:

    Well my batch turned out great :T - I added some coconut with the sultanas to mine - but I think for our tastes, I'll add a little more sugar next time. And there WILL be a next time :j .

    Hi does anyone have a recipe for rock cakes please.
    Ive had a look through the mega index but cant seem to find one:confused:
    The only dried fruits i have are sultanas so would this be ok for rock cakes? dont have any mixed fruit or glace cherries.
    If not what can i bake with just sultanas in?

    Have a look at www.be-ro.co.uk they have some fabulous recipes for all sorts of cakes including rock cakes :D I've used their recipes for years and they work out well. There is a recipe for Sultana & Orange cake on there which is yummy. I would use what fruit you've got instead of glace cherries etc anyway as none of my lot like anything apart from sultanas anyway ;)

    225g self raising flour (or plain with 2 tsp baking powder)
    115g butter or margarine
    115g caster sugar
    1 egg
    115g mixed dried fruit
    approx 2 tbsp milk

    You don't have to put in the dried fruit but I like it in ;)

    Wow thankyou so much girls...the oven is on and im ready to get baking. Will defo check out the be-ro site..im sure ive got a be-ro recipe book somewhere but havent seen it for years!

  • your basic cake recipe is

    8oz self raising flour
    4oz butter/margarine
    1 egg
    2 tsp milk

    for rock cakes add 6oz fruit & 3oz sugar, but you can change the fruit for almost anything. coconut, choc chips, banana, lemon curd is nice (rub in like the butter but not too well) or remove the sugar aswell as the fruit & add 1 level tsp of mustard powder & 4oz cheese for scones. roll out and cut into shapes and cook in a medium oven for 15/20 mins.

    Funnily enough I have just made a batch of Cranberry and Walnut Rock buns.
    Just switch dried cranberries and roughly chopped walnuts for the dried fruit.

    I also make the following rock buns ....
    cherry and walnut,
    sultana and orange...grated rind of an orange added with the sultanas and some of the orange juice to replace the milk),
    spiced sultana ....add a teaspoon of mixed spice with the flour.


    I sometimes make the rock buns using plain wholemeal and self raising flour mixed and add some baking powder.
