You do need a PAC number to transfer the number. You do not need this before you sign up to three.
I have just signed up to three and am using the phone with the number they provided whilst the transfer takes place (it takes a week at the moment)
I can of course still use my original phone/number until the transfer happens.
Hope this helpsTo infinity and beyond!0 -

If I order the pac code how long do I have before I can transfer the number to another network?
If I change my mind will my existing mobile number stop or will anything happen to it? As it’s a PAYGO phone currently consering if its worth just keeping that on as a backup and to get a new number.0 -

they make that available within 48-72 hours. It is valid for 28 days.
Dependant on provider you have to give that number at contract start - some providers (eg three) let you use the number later on.
With three, it then takes a week for the number to be ported. To infinity and beyond!0 -

Even once you port your number to Three, I believe you'll still need to use the new number they give you for people who want to make video calls to your phone ... this might not be a big deal of course, just struck me as a little annoying ...
Still, I wonder how many people actually use video calling? Hmm ...0
