I am looking everywhere for a simple flatbread recipie - I have some thin minute steaks and wanted to serve them with flat bread, salad and a tapenade.:o
Does anyone have any ideas. I'd really like to pretty much mix the bread, knead a bit and bake/grill/griddle.

Flat Bread
150g/5½oz plain flour
1 tbsp olive oil
water, to bind
To make the naan, combine the flour, olive oil and enough water to bind in a large bowl.
Take one half of the mixture and roll into a ball. Sprinkle a chopping board with flour and roll out flat.
Cook on a hot skillet pan for 1-2 minutes on each side. Repeat the process to make the second naan.

this series has a good recipe for naan bread from the series "Indian food made easy" that has just finished on BBC2. Not tried it myself but a fireman made it for his firemen mates at the station house under a grill, so can't be too bad. the rest of the recipes are worth checking out too.

Mix self raising flour into a dough using natural yoghurt. Knead lightly, then roll out quite thin approx 2mm, grill on both sides until puffed up and lightly browned.0

Thanks again. I tried the one with the yoghurt this time and it came out really well. It's so simple - I'll never buy a naan bread again!
My only issue is that the smell is slightly remenicent of pancake. I assume I just need to throw in some herbs and spices to mask the flavour.

i have issues with yeast in that i can't ever get dough to rise!
i made some chappatis the other week which came out really well. mix some chappatti flour with a little cold water and make a dough. let it rest in the fridge and then roll out into little round discs.
dry fry in a frying pan and as they start to get little air pockets rising, push them down with a spatula. flip and do the same till they have little brown areas all over.
they worked really well.0 -

I sent DH out to buy milk, yeast, flour and other essentials before the next snow hits us ...
We live in a rural village so have not being making trips down to town unless essential but both supermarkets in our small town have no yeast, and very little bread flour....DH got the last packet of wholemeal bread four
I do have some other flour left but only one sachet of yeast...
It seems everyone must be doing more home baking rather than using supermarkets...
so what types of bread can i make with no yeast?
i was thinking - tortilla's to make enchilada's for mondays tea....
but i am not sure what else to make without yeast...and can i reduce the quantities of yeast i use in a recipe to make the one sachet i have last longer?
I usually make a wholemeal loaf every day , and this morning made pizza dough using half a teaspoon of yeast....with hindsight i am guessing i could make pizza dough without yeast and it would just be flatter?
any ideas ?

You could make a scone dough pizza base (there are loads of recipes online, this is just the first I found). Or you could make soda bread - again there are lots of recipes online, some will say you need buttermilk but I've made it in the past with ordinary milk 'soured' with some lemon juice.
You can make bread with very little yeast, it'll just take longer to rise. You could even have a go at starting a sourdough culture but I'm not sure how successful you'd be in this weather. Might be worth looking into though.0
