Sorry about you cake I have only made one cake that was any good cant remember the recipe though as it was so long ago when my dd was young it was chocolate with butter cream spread all over it (hides a lot of imperfections ) chocolate finger biscuits around the edge and matchmakers for roman numerials to make a clock face with chocolate fingers for the hand I think tha tshe was eleven as I remember putting the hands to make 11 oclock. Good news is thats the only cake that she remembers as all her other bad birthday cakes that I made are fogotten.0

Victoria Sponge Cake

Feather light sponge and a fabulous filling mean Paul Hollywood's easy to make, classic cake is sure to become a favourite- Servings: makes one cake
- Level of difficulty: Easy
- Preparation Time: 20 minutes
- Cooking Time: 20 minutes
Sponge- 175g unsalted butter
- 175g caster sugar
- 3 Eggs, beaten
- 175g self-raising flour
- 3 tbsp strawberry jam
- 500ml double cream

This is a simple sponge & never fails ...I use it for fairy cakes too.
4oz S/R flour
1 tsp baking powder
4oz soft marge( this one works better with marge as opposed to butter)
4oz caster sugar
2 lrg eggs
2 drops vanilla essence
2 x 7inch cake tins.( if you've only got 8" then use a 6 6 6 3 mix & 1 1/2 baking powder)
Line cake tins.
preheat oven to 170 ( lower if you've got a fan assist oven ..I usually do mine at 160.)
put everythig all together in a bowl ( I sift the flour if I can be bothered)
Mix with electric whisk
divide between tins
bake for roughly 30 mins( just check on it occasionally)......you can use this time to whip up some fresh cream( I use double and add a little icing sugar )

Here you go, can't go wrong with this one.
3 eggs
6oz margarine
6oz caster sugar
6oz self-raising flour
1 1/2tsp baking powder
1/2 tsp vanilla flavouring
or using 4 eggs
8oz magarine
8oz caster suger
8oz flour
2tsp baking powder
1/2tsp vanilla flavouring.
All in one method, basically bung it all in a bowl, mix, shove in a tin, bung in the oven about 190/200 degrees C. until golden brown. I think I usually leave a cake in about 30 minutes.
