    Have been using my PBM 255 for a few weeks now and my loaves have been great. reading your threads and think I may try the olive oil instead of butter in my next basic loaf - bound to be healthier, am going to try the ciabatta next as we often have a ciabatta sarnie for dinner - you know cheese, onion, mushrooms, toms, etc - cheap and filling - have just realised how hungry I am! Still waiting for a recipe for walnut and date loaf though - maybe I should just experiment. Ordered a PBM 254 for my mum for xmas - she's not tried it yet. Don't know what has happened to your loaves lilibet and larny.:confused: - but don't let it put you off.

    Lillibet - was the "brick" floury on top? Could be that it hasn't mixed - make sure the paddle is properly in place, when it's running have a peek to check that it is mixing.

    My brick was cooked around the bottom half and looked floury and cracked on the top. I checked when it was mixing and the dough was being thrown around as normal.

    I am wondering if mine did not rise because I omitted the sugar?

    I will try again as it would be handy to bake a loaf in under 2 hours instead of the 4.
    I am using the SD253 by the way, with the dispenser. I really have not had as much use of this machine as I would like, due to an expanding waistline.

    No, it was spongy & cracked on top:eek:. The paddle appeard to be working fine & mixing. Is it me or is 475g of flour a small amount?

    Lillibet - Not sure what 475g is in metric, but I make the large loaf in my Panny and it takes 1lb 1oz of flour. Sugar is not necessary as there is enough in the flour.

    It sounds a bit like your machine isn't mixing properly, or perhaps it needs a spot more water? I used to have this problem with my Kenwood BM and often had to add water during the kneading process and scrape down the sides of the bread pan.

    Might be worth trying a different programme - the rapid one, or perhaps the dough programme. I guess it's possible that there might be a fault with one programme on the machine.

    I made a loaf yesterday with the following:
    1lb 1oz flour, mix of white (12oz) and wholemeal (5oz)
    1 tbsp olive oil
    1 rounded tsp ordinary dried yeast (not easyblend)
    1tsp salt - but working on reducing this
    320ml water.

    This is basically the white bread recipe from the Panasonic recipe book with some tweaking. I used the 4 hr white programme and it turned out beautifully.

    Sorry to hear of the problems, like others mine always works

    Try it with a teaspoon of sugar

    This one always works for me, place in panny pan in order stated

    1tsp fast yeast [using the measure supplied] in one corner
    1tsp sugar [level] in opposite corner
    1/2 tsp salt in same palce as sugar
    500g strong white flour [or 50/50 white / wholemeal]
    350ml of tepid water
    1 to 2 tablespoons of olive oil [or any cooking oil]
    1 tsp vinegar [bog standard malt will do]

    set on wholemeal if 50/50 or white if not

    Bake, eat

    Well so far I've made 1 large loaf of white bread. It was delicious and even hubby was impressed! :T Our only problem is how do you all manage to slice it evenly???? :confused:
    Also what is the difference between the "normal" loaf and a "sandwich" loaf please?

    Faraway did you mean you cook this on Rapid? I have done a four hour loaf this morning and it is perfect.

    Well, got an early present in the form of the panny breadmaker on special from Amazon before Christmas, but have been poorly over the seasonal period so really not been up to trying it. I am driving back home this afternoon so definitely plan to make a loaf for OH to take to work with him this week - wish me luck!!!

    When I have had similar problems it has been because my yeast hasn't been good. Try testing the yeast out by adding it to some warm water in a jug, with a little sugar and salt and see if it bubbles up after about 20 minutes. If you don't get much of a foam, it could be its past its best.
