can I freeze cheese

    According to a letter written to the Tightwad Gazette, cottage cheese will last quite a long while after the date if turned upside down. The person said they had eaten cottage cheese that was 4 1/2 months after the sell by date. The author of the TG contacted various dairy and medical experts, but they would not go on record as saying this was either safe or risky. I think if there was a risk they would have said so. I have eaten cottage cheese (stored upside down, of course!) a few days after the sell by date & it is fine - not sure I would keep it for months though. Apparently, according to the letter writer, you should continue to store it upside down once you have opened the cheese (presumably with the lid on!!!)

    i've been doing the upside down thing since reading this in the TWG years ago

    i've never left it for 4 months but it has been fine for several weeks

    course you still need to do the sniff then taste taste test but it's always been ok for me

    Why do you need to store it upside down? how does this make it last longer?

    I regularly freeze it when I've bought too much, but it does change the texture, I find it slightly grainy. but it's fine for cooking with, I use it for cheesecake, potato & cheese casserole, stuffed baked potato skins etc

    I've also eaten it well past it's sell-by date many times & it's been fine, although the older it gets less creamy the texture is & the sharper it tastes. not too much of a problem for me as I prefer it with savoury flavours

    will definitely be trying the upside down thing :)

    in the states lasagne is made with ricotta cheese vs creamy white sauce (it's much nicer too, no offense) and cottage cheese is often used as a replacement for ricotta

    you simply put layer up the lasagne as usual but spread a layer of cottage cheese instead of the layer of white sauce

    Can you freeze cheese ok?

    we really love the sainsburys canadian cheddar but its usually fairly pricey, so when its next on offer i thought i would get loads to freeze maybe?
  • Yes you can! I bought some Pilgrims choice reduced to 30p a block last month and have frozen 4 packets with no problem at all. I have tried grated cheddar but dont like this, but OK for Spagbol etc.

    I buy cheese when it's on offer and I do freeze it. You may find that it may crumble a bit when you cut it, especially more mature cheddar.

    Sometimes if I have cheese opened in the fridge and haven't used it - before it goes off, I grate it and freeze it as it's ok to make cheese sauce.

    I find it is fine after freezing.

    I even freeze butter - I use clover and when the BOGOF comes up I put them in the freezer, great.
