Valentines meal recipe ideas?? Chicken based

Options
Hello

I'm going to be cooking a nice romantic meal tomorrow night for the two of us but I can't find a recipe for a meal that is fairly easy to make and tastes delicious!

Found several sites but was hoping someone could point me in a better direction.. I've googled 'valentines meal ideas', recipes etcetc.

I've found the perfect desert I know my partner loves, and as she loves chicken, it would make sense to have the main based around that!

One of the main issues Im faced with is that my partner doesn't eat cheese tomatoes or mushrooms!

Thanks!

  • The easiest thing would be to grill some chicken breasts and serve with a sauce & some nice veg.

You could buy a ready made sauce, or

    a) simmer a pot of single cream and a dash of white wine until reduced. Add some black pepper before pouring over the chicken.
    b) as above but just reduce the cream then stir in a teaspoon of mustard.
    c) simmer a tin of tomatoes and a dash of red wine until reduced. You could add crushed garlic & chopped red peppers at the start too.

Or marinate some chicken breasts in some olive oil, lemon juice & black pepper / natural yogurt and tandoori powder/ honey & mustard, before grilling. Start that off tonight or in the morning if you can.

Happy Valentines Day, hope you have a good time...

  • I quite often buy a white wine or red wine sauce - just pour it over the chicken and cook for about an hour and half.

I generally do some winter roasted veggies in the oven too and some nice potatoes.

    Simple, quick (ish) and easy!

    :D
  • Or, Chicken in sherry & garlic;

chop up some lean chicken into smallish chunks.

Brown the meat off in a pan, in about a tablespoon of olive oil,

Add a small glass of sherry and some finely chopped garlic, turn heat down and simmer gently until the liquid has almost evaporated. (you could use wine instead of sherry).

    Add black pepper and serve.

this is a Spanish Tapas dish that I serve as a main course as it's so quick but lovely, very intensely flavoured.

Nice with some steamed veg like mangetout or broccoli, or saffron rice.

It also works well with mushrooms, (but that's no good to you!)
  • I'm making a Thai Red curry tomorrow night, using chicken. This is a nice recipe. It's OHs favourite so it should make him happy!

take one pack of french roule cheese or similair
use half cheese to stuff 2 chicken breasts
wrap each chicken breast in 2 rashers of bacon, fry them in a small amount of oil, about 4 mins each side, then put in oven in a baking dish
put the rest of cheese in the frying pan with a glass of white wine and heat on a low heat
when sauce is hot and thickened add some baby spinach, stir in and turn off heat
remove chicken from oven and add any juices to the sauce
    serve chicken with sauce over

can be served with almost anything, baked pots, pasta, cous cous, chips etc etc

Or to adapt Glad's recipe as you partner doesn't eat cheese, you could substitute the cheese in the middle of the breast for a couple of asparagus spears with a tiny bit of butter and make the wine sauce using milk or cream instead of cheese.

  • How about mini roasts?

Chicken breast with stuffing and a chipolata inside, wrapped in bacon?

They sell these in Asda at £2.99 for 2 and I love them but hardly ever buy them as my partner would eat 2 to himself.

Must be loads cheaper to make them yourself.

Then some roasties or mash and some veg, oh and gravy of course.

I don't think it' needs to be anything fancy, personally I prefer more traditional stuff

I make Coq au Vin quite often. It is very easy. I use the James Martins recipe here: -

    http://www.bbc.co.uk/food/recipes/database/coqauvin_10455.shtml

I use chicken thigh's (they come in packs of 8 at ASDA). Also you can buy bacon lardons in most supermarkets. I put the whole bottle of wine in and reduce the water in the stock accodingly.

It serves 3-4 but it reheats well

EDIT: Forgot to mention I serve it with mashed potato and leek.
