Try this ...
ITALIAN TOMATO SAUCE
Enough for pasta (or meatballs) for 2
INGREDIENTS
2 cloves of garlic
2 onions
2 tablespoons of olive oil
400g tin of plum tomatoes*
140g tin of tomato puree
2 teaspoons of mixed herbs
Ground pepper to taste
METHOD
Peel the garlic and chop it into tiny pieces. Peel the onions and chop them into tiny pieces.
Put the oil into a frying pan on a medium heat. Add the garlic and onion. Fry the garlic and onion for about 4 to 5 minutes until the onion is soft. Stir frequently to stop it sticking.
Open the tin of tomatoes. Put the juice into the pan. Chop the tomatoes while they are still in the can (it’s easier than chasing them around the pan). Put the chopped tomatoes into the pan.
Add the tomato puree and herbs. Stir thoroughly.
Continue to cook, stirring as the mixture boils, until the sauce has reduced.
Season with the pepper.
ADDITIONS & ALTERNATIVES
Use basil instead of the mixed herbs.
Add a glass of wine and cook for a bit longer. Drink the glass of wine and cook for the same time.
This sauce can also be blended and used as a pizza topping.
* Plum tomatoes can be used either whole or chopped. It is difficult to stick chopped tomatoes back together again if you need to use them whole.

Hi karrie,
There's an existing thread with lots of meatball sauce recipes that should help so I've added your thread to it to keep the recipes together.

I've got half a packet of pork meatballs in the fridge after making spaghetti & meatballs last night. Rather than make the same again is there something else (or some other sauce) I can make with them?

How about doing them Moroccan style, in a sweet and spicy tomato sauce, with added chunks of potato? It's based on something I ate in a local Moroccan restaurant a few years ago and is a bit of a favourite of mine (I usually make it with beef meatballs but I can't see why pork wouldn't work).
Or is the tomato theme too similar to what you had last night?
Edited to add - I love the idea of meatball toad in the hole, Butterfly Brain. That's on my 'to make' list, I think!Back after a very long break!0 -

Hi
I have made pork meatballs with chinese five spice added then served with either sweet & Sour sauce or a sweet chilli sauce. This can then be served with noodles or rice.

Noodle soup! Yummy with small meatballs, some egg noodles, good chicken stock and green veg or bean sprouts etc (nice with pak choi, add some chopped chilli & oyster sauce to the pan when cooking meatballs(to get colour on them), then add chicken stock, pak choi or other veg and simmer until meatballs and veg cooked, serve over noodles) Or I once made it with kale, and parmesan cheese featured too but I lost the recipe and haven't been able to find it again, but kale would also work well in the chinesey one.
For the noodle soups its best to have pretty small meatballs-so if they are big you might want to reshape into littler ones0
