    I've spent ages looking through this thread for the optimum way to make yoghurt and thought it may be a good time to post a summary....

    1. Use UHT (full fat = thinker yoghurt) which has been warmed to a room temp - certainly not so hot that you cannot leave your finger in it
    2. Add 3/4 table spoons of milk powder to make it nice and thick - make into a paste first so that it does not turn out lumpy
    3. Add two table spoons of fresh ( not older than 5 days) yoghurt. Make sure you know the age it was made e.g. if buying from a shop when was it actually made and dont go by the sell buy date. Best to use some of yoghurt you made a few days before.
    4. Leave in a warm area or in an easy yo maker
    5. Always use clean stuff - right from the dishwasher is best and the plastic easy yo containers are great.
    6. Leave up to 8 hrs and then chill - perfect !
    7. Whey may form each day - dont worry either pour away to make your yoghurt thicker or mix in.

    That's pretty much what I do, but I use semi-skimmed UHT, and it turns out fine.

    Sometimes, if I want a thicker yogurt, or something more like cream cheese, I strain it through a sterilised dishcloth (that I keep for this purpose!). The whey can be used in soups. I'm told you can also use it for bread and pizza base although I haven't tried it.

    Micro - thank you for your summary. I've been using semi-skimmed UHT milk for yoghurt in the past and wonder if this is why sometimes I've ended up with a very liquid product although I notice Lazy Daisy finds it OK (as I've done most of the time). So I'm still wondering why I occasionally suffer this rogue liquid version when on the face of it, every time I've followed exactly the same procedure and am very careful about hygiene. Think I'll also use a little milk powder in future too.
  • As I don't have a dishwasher and I'm very mean with hot water (I have to run the tap a long time before it comes through :( ) I'm wondering... for sterilising, would the EasiYo container survive microwaving with water in it? I wouldn't use the EY lid of course, I'd pop a (OMG I can't remember what they're called :confused: QVC sell them) on.

    I have found that you dont need to be massively concerned with sterilising - unlike wine making yoghurt does not seem to require the same level

    I wouldn't put it in a microwave, I don't think it would fare well. Just wash as normal.

    If you feel the need to sterilize (I don't, but maybe I should!) just hold the jar over the steam of the kettle when you are boiling water for tea/coffee etc. xx

    Lakeland do a pack with one spare big jar and 2 individual jars but they're quite expensive at £8.88.
