Another embarrassingly dumb question (roasting a whole chicken)

    sorry didnt realise alot of chickens have empty cavity we buy them quite often already cooked.i dont like pinky bits and dont eat that either.i am sure you will do fine try and enjoy .x

    How long can I keep the leftovers in the fridge? Should I freeze the chicken for the curry and pie and take them out to defrost the night before I plan to cook them? and is it a case of throwing the thawed cooked chicken into whatever I'm cooking and making sure it's toasty hot before eating or would I be better blasting the defrosted chicken in the microwave until burny hot and then adding to whatever I'm cooking?

    I can recommend chicken pie. :drool: I really ought to make another - I only ever made the one. :o It took ages because I'm a very slow cook, but it was worth it. It was massive, and lasted about 3 days. :D

    I don't think anyone else has mentioned this yet - but you can cook the chicken breast-side down in the roasting pan. Sounds crazy, but the benefit of doing this is that the juices sink into the breast meat. If you have one of those roasting pan racks, use that as you'll also crisp the skin up on the breast, even though it's upside down.

    If there's room around the bird in your roasting pan, quarter a few parsnips (lengthwise) and tuck them around the outside of the bird. Parsnips are delicious with roast chicken.

    I'd save your leftovers, and freeze them after they cool down, in those sealable freezer bags (flatten out the bags, they'll defrost faster).

    I have to say, I was mentally counting the days until Friday. I wouldn't get a chicken that soon without freezing.
    Leaving a chicken in the fridge until cooking it on Friday is a bit too long, in my opinion. Do you have a freezer? If so, I'd bung it in there and get it out again on Thursday evening, if the meal is for Friday night's dinner.

    Roasting a chicken is easypeasy (when you've done it a time or two!) Have you a friend or relative nearby who would actually prepare and cook one in front of you so that you get the opportunity of seeing first hand how it's done. Sometimes being shown is much easier than trying to follow written instructions but worrying about it! Good luck and I'm sure it will be fine.

  • Percy really doesn't want to fit in the freezer, he was delivered yesterday will he be ok in the fridge until Wednesday?

    I could cook him tomorrow.......
  • Good luck sparklewing. I hadnt cooked a chicken until last year when I was 38! I still wasnt brave enough to tear all the chicken off once cooked. I used to give the chook to my mum. No longer!! Rubber chicken in this house. Hoping to be really brave and cook roast pork or roast beef soon.
