  • Thanks - I've got the potato in the mince while it's heating and it's taking away the saltiness! Yay!

We cooked a big ham joint at the weekend, after which, I threw the big bone into a stock pan with some water, leftover meat, onion, celery, carrots, red lentils and a few potatoes to make some soup. It is lovely and thick, but it is SO salty! I don't really want to throw it away, so does anyone have any ideas of what I can do with it either to remove salty taste or use it for something other than soup?

    Thanks in advance.

The traditional advice to cure a salty stew is to cook potatoes in it. Or add more veg and potatoes and make it into a bigger batch of soup to spread the salt out.

A chef friend of mine says to throw in a couple of raw potatoes, they seem to take up quite a bit of the saltiness as they cook through.

ah Lizzy beat me to it!!

Another, albeit late, vote for the potato trick.

Did you soak the ham before cooking it?

If not, then next time, rinse the ham in cold water, then soak the ham in cold water for at least 6 hours, changing the water once or twice if it is very salty, or according to any cooking instructions.

As above, stick a few peeled raw potatos in it and wait for a bit on a low heat. They'll draw out a fair bit of the salt. Keep testing every 5 mins until you get to the level you want, if it's still to salty after about 20mins stick in another peeled raw potato or two and repeat.

    Thinking laterally here ....

Reduce it and then use the remainder as a soup base, adding more stock & veg but absolutely no more salt ...
