I did a lime tray bake some time ago.... Just substitute lemon juice for lime in a lemon drizzle recipe....

This is similar to key lime pie. No baking required.
LIME DELIGHT
INGREDIENTS
Base:
4oz digestives, crushed
2oz butter
Filling:
10fl oz double cream
Small tin condensed milk
3 limes – juice and zest
Slices of Kiwi fruit for decoration - optional
METHOD
Melt butter and stir in digestives. Press into a 7” round tin, lined with cling film. Leave in the fridge to chill.
Whip the cream, then add the condensed milk, lime juice and zest. Mix well.
Fill the digestive base then return to the fridge to chill.
Decorate with Kiwi fruit slices just before serving.Fully paid up member of S.A.B.L.E.

LImes also come in handy if you slice and freeze the slicesInstant zingy ice cube for your cold drink (or vodka!)
