Friday-Scampi & Chips
Saturday-Out At Friends
Sunday-Lasagne, Salad, Garlic Bread & Wedges (Friends Over)
Monday-Chicken, Roasties, Yorkies & Veg
Tuesday-Sausage Cassarole & Baked Spuds
Wednesday-Fish, Boiled Spuds, Veg & Parsley Sauce
Thursday-Lamb Stew & Dumplings
The only thing I need to buy is mince for Sunday and fridge/fresh stuff.
So, what are you all having?

Sunday - going to try Nigellas' ham in cola don't know what with yet
Monday - lasagne and salad
Tuesday - toad in hole, new potatoes and peas
Wednesday - ballet night so beans on toast!

Sat - Sausage and pea risotto
Sun - Chicken bacon and broccoli pasta bake

Sounds good to me! What do you stuff your mushrooms with? I'm trying a stuffing I usually use in peppers for my stuffed mushrooms next week, just interested to hear what other people use
Roasted greek potatoes sound nice - what goes in this apart from the obvious answer of potatoes

Fri - mince and tatties to celebrate DD's return from Australia
Sat - whatever she fancies
Sun - roast beef, roast pots, parsnips (thank you Aunt Bessie), yorks and loads veg
Mon - stovies
Tue - something fishie
Wed - something veggie
Thurs -poss out with DD and sis to Indian yippee0 -
Friday Pork and carrot with pasta
Saturday Swedish meatballs in wraps with salad and maybe potatoes
Sunday Prawn, dill and courgette spaghetti
Monday Mushroom risotto
Tuesday Falafels and wraps with salad
Wednesday JPs with cheese and beans :drool:
Thursday Chilli con carne with rice
Lunches are normally soups, salads or sandwiches
Brekkies are normally cereal or fruit and bread

Last time I made stuffed mushrooms, I sauteed the stems & gills with garlic & onion, then added fresh breadcrumbs and probably some other stuff which escapes me at the moment :rolleyes:. This time I think I'll sub steamed quinoa for the breadcrumbs for a bit of extra protein and add sundried tomatoes and basil for a kind of Italian-ish taste.
The Greek potatoes are roasted with olive oil, oregano, garlic, lemon & veggie stock.
Roasted Greek Potatoes
500g potatoes, peeled and cut into 1 to 1-1/2-inch cubes
2 tablespoons olive oil
1/2 teaspoon dried oregano
1/4 tsp salt
Freshly ground black pepper
2 garlic cloves, crushed to a paste
1/2 cup vegetable stock (I use a stock cube to make)
juice of 1 lemon
Preheat oven to 200C.
Place the potatoes in a single layer in a roasting tin and pour the oil over them. Add dried oregano, salt and pepper to taste and toss well to coat with the oil.
Roast the potatoes for 10 minutes. Add garlic, stir to coat potatoes and cook 5 minutes more.
Add the stock, stir and roast for another 15-25 minutes, until most of liquid is evaporated and potatoes are almost soft. Add the lemon juice, stir, then cover the tin with foil and cook for 15 minutes or so more, or until the potatoes are cooked through. If there is any liquid left, uncover and continue cooking until liquid is evaporated.
Two servings.

This is my second meal plan - I tend to shop once a fortnight so am working out how to plan for that, whether to do a mini shop for fresh things in between main shops and plan 2 weeks in advance... there's only two of us and OH is a better cook than me!So I'll volunteer on hotdog and pizza days...
I haven't allocated days yet!

Well last week I didn't really stick to the plan, but it doesn't matter, much better to have a plan and be flexible with it, than no plan at all. It's very encouraging doing this thread.
Let's see about this week, thinking if I put a bit more detail it might help me remember!
This week..........
Today, Thursday:
No DD, so chicken wings (the last chicken in the freezer!),
Potato wedges and salad. Not a big pack of wings, so I'll probably have some soup and wedges, the real carnivores can have most of the meet.
Friday:
No DD, so retrieving left over rogan josh and saag aloo from the freezer. Spicy rice maybe, or I might try and make some chapattis.
Saturday:
Turkey/ham (guess where that's from!) in mushroom sauce with pasta, dd can have mushroom and cheese sauce.
Sunday:
No DD Steak and broccoli stirfry, found recipe on BBC website, meat in freezer, about time it was used, bought the broccoli and have OOD cashews. http://www.bbcgoodfood.com/recipes/5072/stirfried-beef-with-cashews-and-broccoli.jsp
Monday:
late home, rehearsals after school and I'm in work all day. Something to leave in the oven? Hmmm ? Haven't tried a bean/veg lasagne yet? Could get that ready on Sunday.

Will have to think about the last two days..... Soup and pud maybe? still have some turkey broth
Wednesday:
??????????maybe I'll get inspired by something someone else does.
Last week
Thurs: HM fish cakes, hm mushy peas and hm wedges (happened, were good)
Friday: quiche lorraine hm or vegi cheese and onion (happened , were good)
Saturday: Pasta bake ( turkey and mushroom or mushrrom and cheese)(didn't happen, ended up with MIL:mad: and dd's bf. Fish pie instead, pasta bake to feature this week maybe)
Sunday: MIL's I hope (Didn't happen, had gammon, eggs & beans instead)
Other days
Mon: pizza (happened & some left for ds lunches)
Tues: Bol hm(reg or vegi)(Happened, dd delighted with Quorn bol, lots of both in freezer))
Wed: Jacket potatoes (may be used as substitute if I end up in a hurry!)Happened, I had to work, so dh did these.:T
3: Burgers hm/bean burgers... not happened[SIZE=-1]"Knowledge is knowing that a tomato is a fruit. Wisdom is not putting it in a fruit salad"[/SIZE]
