There is a really nice recipe for strawberry preserve on delia's on line site.
I use a recipe which makes a kind of conserve.
Put the strawberries into a large bowl and pour over lb for lb of sugar i.e.2lbs strawberries 2lbs sugar. Put a plate on top and leave overnight. in the morning, tip into a large pan and add the juice of a lemon bring to the boil ensuring that the sugar is dissolved.
Turn down the heat and roll boil until set is achieved, i.e. remove the pan from the heat, put a spoonful of jam onto a cold saucer and allow to cool. If it wrinkles when you draw your finger through it, its ready, otherwise put back on the heat for about 5 minutes and test again.
Once setting point is reached remove from the heat and allow to cool for 10 - 15 minutes, then pour into warm jars cover and leave until cold................

Help please.....I've just been in the garden and found that, despite the distinct lack of sunshine, I've got loads of strawberries that have ripened. Unfortunately, I've probably left it at bit too long before picking them and I really need to use them up today. Sadly, there's not really enough to make it worthwhile getting the jam pan out but I haven't got any cream or ice cream (or money in my budget for this week!)
so can't do them that simply.....any ideas?
PS I have eggs, flour, sugar, all the usual suspects in my baking cupboard. Any ideas for a scrumptious pud would be very welcome!:think:0 -
Same here, I have a punnet in the fridge, well past its best. would love an easy pud to makeAlways on the hunt for a bargain0
