What to do with a glut of strawberries?

I used up our glut by making strawberry sorbet - the kids scoffed the lot so there was nothing to be stored. I used this recipe from userealbutter.com (love her recipes and photos), but found it was a little too sweet. I guess that varies on the type of strawberry you use.
1lb strawberries, washed and hulled
half a cup sugar (sorry it's american)
half a cup water
1 tbsp vodka (keeps it slushy)
1 tbsp lemon juice
pinch of salt
Just blend together until sugar dissolved and then churn in an ice-cream maker (or put in tupperware in the freeze and fluff with a fork once an hour or so). I didn't bother to sieve out the seeds cos I only have a small sieve.0 -

I'd macerate them. If you'd like to do samething fancy with them you could always mix the macrated strawbs with 50/50 yoghurt and whipped cream having mashed half of them first.0

Jam is the perfect use for any overripe fruit.
But with strawberries, I agree that eton mess is the best - particularly with a little rose water whipped into the cream, if you like it :j0 -
Or, if you really fancy a warmer dessert try strawberries with dumplings.
Cook them down with a little sugar (not much, they'll be pretty sweet already) and make up some sweet dumplings.0 -
