chinese cooking ?

Hi all,
we're doing pretty well with sticking to a food budget, apart from a once a fortnight addiction to a chinese takeaway!

First item I'd love a recipe for is sesame prawn toast... now I know it contains prawn, sesame seeds and bread... but what else, and how does it stick together?

Next thing is salt and pepper chicken wings. These seem to have a flavour unlike anything else. And since I started buy asda smartprice wings at 1.21 a huge pack I'm objecting to paying nearly a fiver for a quarter of the amount!

Please help :o

    2 lb raw prawns, peeled and de-veined
    4 egg whites
    4 tbsp cornflour
    1 tbsp sugar
    Large pinch salt
    Large handful chopped coriander leaf (optional)
    Sliced stale bread
    Sesame seeds

    Mince the prawns finely with a heavy knife (You can use a food processer but the texture is never "right")

    Mix prawns with egg whites and cornflour. Add sugar, salt and coriander.

    Remove crusts from bread and spread the prawn mixture evenly onto the bread.

    Put sesame seeds into a dish and press the prawn side of the bread into sesame seeds, shake off excess.

    Cut into triangles or fingers and deep fry in medium heat oil prawn side down for 2 mins, turn over and fry prawn side up for 1 min. Drain and serve.

    *You might want to reduce the quantities above as this makes loads :p Also, if you pop the bread inot freezer for 30 mins (after spreading prawn mix on) and then take them out to slice up, you'll get a much neater cut. They can be kept in the freezer when you've sliced them up and cook fine from frozen too.

    I've been having a cupboard sort-out and have come across the following ingrediants to use up, however I am lacking inspiration - can you guys help please?

    1 tin bamboo shoots
    2x packs of rice noodles (bought @5p each yesterday at asda)
    also in cupboard along the chinese-y type theme:
    1 tin straw mushrooms

    1 jar ken hom jalepino sauces (?!?- must have been a TMF - in fact i remember now, it WAS at TMF)

    I've also got the "usual" store cupboard type things and a "normal" range of fresh fruit & veg in the fridge and fruit bowl.


    Can anyone inspire me for tea please?

    I would just bung it all in together and do a stir fry! Not sure what the noodles are like, will they do instead of rice? Got any soya sauce? Not that you'll probably need it with that sauce.

    that's kinda what i thought with onions (maybe also peppers, peas), and a bit of soy sauce but was hoping someone could give me a "proper" recipe.
  • soak the rice noodles in boiling water.
    chop up whatever veg/meat you have into similar sized pieces. fry off some chopped chilli, garlic and ginger if you have them. then add the rest of the veg and meat. stir fry till tender or however you like it cooked.

    add in the sauce and then the noodles. stir fry for a couple more minutes till everything is coated and you're done.

    What a coincidence - that's exactly what I did for tea tonight. This is what I did - but no doubt you can make alterations where necessary

    Toasted some cashew nuts
    Cooked some noodles
    Sauted some leek and carrot strips in peanut oil
    added sliced mushrooms, water chestnuts,bamboo shoots and some leftover chicken
    sloshed in some soy sauce and a bit of chinese 5 spice
    Let all that cook through for a few minutes
    Added in the cooked noodles and the nuts, mixed it around and let it all heat through
    It was really good

  • Garlic, fresh orange juice, honey and dark soy sauce make a yummy sticky chinese sauce.
