Given they have no evidence of the fault codes and can't replicate the problem, then I'm afraid they're going to dismiss the problem as driver error.
If you provide the car make and model, maybe people can find out if this is a known issue.

You sound like a townie!
Lots of country roads are only wide enough for a single vehicle. There will be 'passing places' at intervals where the road widens enough for two vehicles for a few metres. If you spot someone approaching from the other direction you pull over to the left then stop on your side of the passing place to allow them to go past.

Make and model of vehicle woukd be useful in these situations. Yesterday I watched as a hotel valet parker almost total a chinese brand SUV.
He was reversing and the handbrake was obviously on as the rear of the car lifted, but it appeared not to auto release. It then released while he was still applying power and he ended up just missing the corner of a substantial stone wall.

I think it It would be a very stupid ECU to produce a fault code if this were the case

I am really struggling to understand how a fault code saying no communication could possibly be caused by driver error?
It does however seem stupid of the RAC to have cleared the codes

But they don't have the fault codes because they were wiped. So it's just the OP relating what the RAC person told them which, with the garage unable to repeat the fault, isn't going to hold much weight.
I suspect that the RAC didn't decide to wipe the codes, it's likely just what automatically happens when they're read.

That would be a spectacularly stupid and unsafe feature on a car! To the extent that it would definitely make a car unsafe to drive!!
A child steps out in front of you, so you hit the brake pedal. But there is a car too close behind you, so the car decides not to stop?
The car company would get sued out of existance.
