what about just using an old smart phone secreted before the shift?

But most people work for 8 hours a day + or - so a risk it will start bleeping and alert him to the fact he is being tracked

The simple answer is "yes". But then, to complicate matters, the OP asks in the title of the thread, if there's a tracker they can fit themselves, but then in the original post, says they have a professional fitter who would install it. Which is it?
A professional fitter/auto electrician would have no bother installing a tracker but they might have a preferred one to recommend.
You can get simple ones which plug into the OBD port but they are not as good (for GPS reception) and obviously can easily be manipulated.

This takes me back to the early days of the Tachograph - A client was dubious about them and had a fleet of about 50 trucks so it was going to cost him. He asked that we fit one to a reps car to try it out.
We did so and the rep was told to fit a new disc each morning. After a couple of weeks we removed it and collected the discs together to demonstrate how the analyser machine worked.
The disc showed that it was fitted/removed as instructed but little mileage during the day but between 7.00pm and 2.00am lots of activity.
Turned out he was working from home using the telephone to contact customers but running a Taxi Service at night.

Depends on the shift lengths but I did work for a firm where a guy was doing night outs and arriving back
at the depot around 3pm on the 2nd day. He never took holidays outside the companies fixed holidays and
did not have a sick day in years until he was off sick and a relief driver did his shift in a single day arriving back
just before 5:30 and he did not know the route so he could do it faster the 2nd time he would do it.
A bit of a panic at first as they were not expecting him back and thought he had failed to deliver items but he did them
all and had his proper breaks so not put on break when offloading etc.
Night out's paid double money so he was raking it in and making sure he always got the job done to avoid them

Why can't you just review the dashcam footage to see what the van was doing all day? If he's skiving off then it's almost certainly going to be parked up somewhere, rather than just driving around aimlessly.

The person who is tracking cannot turn it off only the person who is being tracked and it's on by default anyway. Yes if the person doesn't have an iPhone they won't know, but many people have iPhones so it would be a risk to the OP. And it's set up as being on in the iPhone by default.

Not so, my son has disabled the sound on the tag on his bike and on the tag on his dog’s collar.
When looking after his dog for a couple of days I got a message that an unknown AirTag was following me. That was the one on the collar. There was no bleeping.
Disabling the sound is not the same as turning off tracking.
