A bakery I go to regularly uses a hand held terminal like the type you get in restaurants, and they have quite a high counter and just point the front end at you so you can't see the screen. Most people seem to just tap even with phones, and the staff sometimes seem put out if you ask to see the screen! Clearly they're used to people just tapping without checking!
At least paying contactless with a card I know they won't charge me more than £100!

It might be more secure from a fraud POV but seems far less secure from a mistake, and at least if fraud is committed using a card the bank has to refund, do they always have to refund a mistake?

Yes, often (but not always), but if you then enter the amount manually on the machine the till is irrelevant.

@The_Green_Hornet , farmfoods is the most obvious example: you don't see the till and the amount doesn't show on the machine when you pay - although I believe are connected.
In Morrison you see the till, but no amount is not shown in the machine display, but again they are connected.
When I go for a hair cut they use a machine which shows the amount clearly (and that is entered manually). That often happens with machines working with things like "sum up".
However, in this instance I was at a smaller shop where they enter the amount on the machine manually - hence the issue. For some reason someone had entered 510 just before I turned up.

Here is good video comparing PIN and finger print security:
The level of security offered by a mobile phone finger print reader is said to be between that of a 4 and 5 digit PIN. With Android, if the finger print fails, you (or a hacker) is offered the option of typing a PIN. In that case, enabling the finger print reader reduces the security offered by the PIN. The video goes into more of the details.
I mostly pay with a debit card attached to an account that has only a small a balance and no overdraft facility. The contactless limit is set to £20. That is convenient for me, and has near zero risk. The bank will almost certainly compensate me for any loss. More importantly, that card does not give a way of getting into any of my other accounts.

Which bank? Most maybe all the big ones have Fraud teams available at weekends

Supermarkets are less of an issue because goods are scanned in via barcode. Its the independent shops that just type in a value where you need to be insisting on you see what youre authorising.
