Microsoft OneDrive is baffling me...and driving me nuts

best way to avoid onedrive is to do initial setup with a local account using the oobe\bypassnro method which still works with the current windows build. That way onedrive is not enabled by default.

you can also uninstall onedrive from settings/apps

True, but prior to uninstalling it you need to remember to unlink the PC first.

If you uninstall it does it sneak back in on the next update?

It shows for FAT filesystem variants, but not for NTFS (which has metadata journalling).
