Have confirmed it won't be paid on my behalf. There isn't an option to transfer the fine to myself as on the letter, this option has lapsed. I have been asked to appeal as a company representative as I am the driver of the car, is this something I can/should do?

That option has NOT lapsed. Transfer of liability can be done at any time.
However, yes appeal as a company representative WITHOUT saying who was driving and use the special Edna Basher appeal for companies to use.
