I only know Waze, but I imagine google maps is similar-(both are owned by google, and use the same live data)
You open the same app on the 'phone when it isn't connected to the car, and there are some settings menus that you can change. Sometimes it is a cog icon, sometimes it is 3 horizontal dots.
Try installing Waze, you have to turn off the "show other waze users", but everything else defaults to what you want, including displaying the speed limit, and a chime if you exceed it.
I want to go back to The Olden Days, when every single thing that I can think of was better.....

It's not the speed limit that's useful on Waze, it's the 'watch out there are hidden police' which is more useful. It's saved me a couple of times when I may have inadvertently strayed over the limit.

So, Android is part of Google. And Android Auto is part of the Android O/S - it isn't a separate App. But it uses Google Maps for SatNav. So I go into Google Maps to change settings, which I hope will include speedo and limits.
If it doesn't, I'll try Waze.

If you go into the Google maps app on your phone, press on the little icon for your account, select settings, select Navigation, scroll down to driving options, and you can turn on Speed limits and Speedometer. Whilst mine does display speed limits on the infotainment screen, I've never seen the speedo displayed even though it's turned on.

An elderly neighbour changed cars a year or two ago to a VW T-Roc.
The dealer set it all up to use her phone as the nav via the built-in screen and Android Auto.
This is how she got VERY lost for two hours, late evening. She had her phone with her… but there's lots of places round here where there's simply no signal…
I changed it to use the inbuilt nav for her.1 -

Interestingly, Speedo and Speed Limits were already selected, although neither appear on the car screen. I'll see if there's an option on the car screen itself to display it. If not, no biggie.
I got the digital speedo up on the dash panel, so daughter finds that useful.

Yes, I would also use a built-in SN if available - as I do on our other car. But there isn't that option on the i10.

You can download the area's mapping (for Google Maps at least) to your phone and then it will work fine, all you'll lose if no signal is any live traffic info (also saves on mobile data).

Download off line maps. I have google UK stored on phone, so limits data usage by AA.
TBH, if there is no phone signal, then in built sat nav is using stored maps & would get no live data, as that requires a built in SIM, just same as phone does.
