Best cream tea scones

    Apparently four minutes of sitting in just boiled water is required for the proper tea flavour. I think then to get weak tea, dilute with further water, rather than remove the tea leaves earlier. 

    I am (newly) a cafe operative (?) for a local repair cafe, so I shall be experimenting on Gill, who likes weak tea.

    Butter and cream is far too fatty.  It throws the cream/jam balance off.

    Cream on one half, jam on the other and then sandwich together. A method that suits everyone.
    I favour the two spoon approach to clotted cream application. A good teaspoonful dollop that is slid off the bowl of the spoon with the other teaspoon and then gently splodged across the jammy scone with the back of the second spoon.

    As a gluten free person, gf scones are often awful. The best I've ever eaten are in a cafe I used to take my late mum to. She would say she wasn't hungry then promptly demolish 2 scones, jam and cream! It's the birdcage bakery, in Yate, just north of Bristol.
