    I used to work in morrisons, as a baker, we sold fresh yeast which they got in seperately to the stuff we used, but when it ran out people would ask us for it and we were told to sell it to them, quite often it would be really really cheap, cheaper than it would've been if the store had any in stock so its always worth asking at places, even if they do sell it. It's worth having more anyway because you can freeze it!

    My ex FIL was a baker, and even small bakeries will give it away, it's best used fresh, so probably not economical to maintain large stocks for long periods.....
    Please forgive me if my comments seem abrupt or my questions have obvious answers, I have a mental health condition which affects my ability to see things as others might.
  • I used to work at ASDA i remember many people came to the bakey for free yeast, this has been going on for years, the yeast is even packaged nicely for you.

    Not sure about the "give it away because it's alive argument" Sainsbury's charge for yeast and everywhere sells yoghurt!

  • White Bread Buns

    500g strong plain flour
    15g - 1 1/2 teaspoon salt
    30g - 1oz fresh yeast
    300ml lukewarm water

    Start yeast by creaming with a pinch of sugar in a measuring jug and add a little of the warm water to about 100ml.
    Leave in a slightly warm place until frothy or you can hear the bubbles hissing.

    Place flour and salt in mixing bowl and make a well in centre.
    Top up the yeast mixture to 300ml and add to the flour.

    Mix with a knife until clumped together.

    Either turn out onto floured surface or knead while in bowl for 10 minutes.

    Cover bowl with oiled plastic or put in oiled plastic bag and leave in warm place until doubled in size (about 1 hour)

    Knead for another 5 minutes and divide into buns.

    Space on greased oven tray, cover with oiled sheet and allow to rise until doubled in size again.

    Cook in preheated oven gas 7 220c for 12 - 15 minutes until golden brown.

    Turn out on to rack an allow to cool before splitting.

    For a loaf, same recipe but put into greased loaftin, allow to rise and cook for 35 min at gas 7 220c.
  • Doughnuts

    250 g plain flour
    Pinch of salt
    30g g sugar
    50 g margarine
    1 egg beaten
    100 ml lukewarm water
    15 g fresh yeast

    You will need 7 cm and 3 cm pastry cutters. (Empty soup tin and screw-on wine bottle cap are the right size.)

    Take margarine from fridge.
    Cream yeast in measuring jug with a good pinch of sugar, add 1/2 the lukewarm water and leave to stand until starting to bubble (about 20 minutes) then top up to 100 ml.
    Sieve flour, salt and sugar in a bowl and rub in margarine.
    Add yeast liquid and beaten egg and mix in with a knife.
    Turn out on to a floured board and knead for 10 minutes.
    Return dough to bowl, cover with film and leave to prove in a warm place for 3/4 to 1 hour until risen.
    Turn out on to lightly floured surface and knead lightly.
    Roll out 1 cm thick and cut out rings.
    Lift carefully and proove on greased warm baking tray for 5 minutes.
    Re-roll the trimmings and repeat until the dough is used up.
    Heat up the oil in a deep fat fryer. The oil should not be too hot- just hot enough for a cube of bred to rise immediately and turn golden brown in 1 minute.
    Lower doughnuts into the fat 2 at a time and cook for 2-3 minutes on each side until golden brown.
    Drain well and toss in caster sugar.
