Just use the Template Defence and raise those points in your para 3. You can deny that the car was in that car park on that day AND deny that Tesco parking signs create a contractual PCN of £80 as pleaded. State that the claim should be struck out.PRIVATE 'PCN'? DON'T PAY BUT DON'T IGNORE IT (except N.Ireland).
