    I believe soda bread, like scones & anything else raised by baking powder/baking soda, is best done by hand as it needs as little handling as possible for best/lighter results, & using a mixer is likely to overwork it & make it heavier

    Up until today, every time I'd made my own bread it would smell and taste too yeasty, and be too dense.

    After reading this and other threads about making bread, I've just made the first ever loaf that tastes just like I want it to, and has the right texture, too.

    Turns out that the problem was 1. not kneading long enough (I now put a timer on to time 10 mins) and 2. using too much yeast (this time I used 1 teaspoon of Doves Farm Quick Yeast to 500g flour).

    So thanks to everyone who's posted about bread!

    After a while of not feeling like making bread again, I've just made five loaves and some pitta bread.

    It was this morning when I had some toast made with bought bread - and not cheap either. I can't go on like this, I thought, its awful and out came the Kenwood and the flour and stuff.

  • I use my breadmaker to make my dough and then cook it in the oven and it tastes like 'real' bread. Not expensive to make - I use one tsp yeast to 600g of flour (usually half white/half wholemeal), 1-2 tsp salt, 2 Tbsp olive oil, 400ml water. I put all the ingredients into the breadmaker and put on 'pizza' setting for 45 mins. I then take it out and divide into two oval loaf shapes, put it onto a baking tray covered with baking parchment, and cover and let it rise. I then bake it for 25 mins in an oven pre-heated to 190C, then turn over for a further 5 minutes. Cool on a baking rack and wrap in cotton dishcloth to store.

    I have no bread in the house at the moment, and as its raining outside I have decided to give this a go! I have made 1/2 the quantity as I only want to make one loaf. Its in my BM at the moment on the dough setting, then i'll bake it in the oven. Ill report back on the results!

    I love my panny. my mum came round the other week and said that i should have borrowed the old machine she has, and doesn't use because it produces bricks, tasted my bread and said she completely understood why i'd made that choice as the bread was so light and yummy.

    if it's given the chance it lasts very well too. gave my husband homemade bread one day then a couple of supermarket rolls from the freezer the next. he was not impressed and now only wants homemade bread :D

    now what to do with all the loaves/ rolls in the freezer. lots of bread and butter pudding? :rotfl:

    I haev had a bm that my mum gave me I gave it a go and tried to make wholemeal bread but it turned out really bad. Last week after about 6 months of not using it i tried a white bread receipe and i had success. The bread was soft and tasted wonderful hubby was amazed that it came out so great. I will only make my own from now on.
