Hi took out a amex gold rewards card for the reward points as I am going on holiday this year and thought I would easily hit the spending in 3 months. However as I found out some of holiday expenses won't accept amex like certain hotels. What other ways are there to manufacture spend.? I have already looked at utility bills council tax. I read you can do something with PayPal?

You can book flights and hotels via Amex Travel.  That ensures that Amex is accepted.
If your partner gets a supplementary card on your account, their purchases will count towards your target spend.
Purchasing a holiday (paying in full) may well hit £3k in one transaction.  Maybe  you can book you next holiday now?  This month I'm hoping to book my Ireland holiday for June next year

    My dentist takes Amex.

Hitting £3k is not a problem.

If a hotel won't take AmEx directly look at an agent that can book it for you that does accept AmEx; obviously dont pay a material premium for doing this but its rare that there is a big gap in pricing

Any utilities, bills or anything else you have which support PayPoint can be paid/settled with Amex at a Co-op Group store (not another society like Central England, Southern, Scotmid etc).

Octopus Energy support Amex payments directly.

A simpler option is to buy gift cards for things you will spend over time, effectively bringing your spend forwards.

Book a stay with free cancellation, once Amex reward redeemed cancel stay and get refunded.

If you link your Amex card to your PayPal account, that gives you another payment option.  I do this to boost the reward points I can collect from Amex.

PayPoint at Scotmid is OK with Amex.  Paid my June council tax today.

That probably means Lakes & Dales plus Semichem too. I've always had to use Visa or MC in the past.
