    Just had a lovely lunch which consisted of some of last nights stirfry - Courgettes, Bacon strips, sugar snap peas, spring onions and beansprouts with miso, then I added some cold brown rice it was lovely!

    Yesterdays lunch was Lettuce, Tomatos, sliced spring onion, HM coleslaw and a sliced boiled egg Yummyness!!

    Just have to figure out what I am having for lunch tomorrow =S

    Salad is fab but I do have to admit - it can be a lot of preparation!

    My latest favourite (closely behind Chicken Caesar) is Bacon and Avacado Salad in Hellmans Creamy Garlic & Herb dressing with toasted pine nuts. So good.

    Also - HM coleslaw goes well with things like omelettes, sausages, jacket potatoes, etc. I make mine using half mayo, half Saladays Coleslaw dressing. Really yummy!

    Another good thing on a hot day (can you tell I'm inspired?) is homemade pasties - any filling (I do ham & cheese or baked beans & cheese) wrapped in shortcrust or puff pastry. Salad, coleslaw, HM chips/wedges on the side!

    Last night we had chicken drumsticks (coated in honey, tom sauce, soy sauce, bit cajun spice & roasted), homemade coleslaw (- I do couple spoons mayo, juice half lemon & lots black pepper), jacket spuds & corn on cob. Was delicious!

    Tonight we are having gammon with the same components as above minus the drumsticks!

    Tomorrow homemade mac cheese with yep, salad!

    Thanks ashbart, wouldn't have thought of pasties as summer food but with salad they are! Do you make individual ones or large pie type and cut into pieces?

    we picked up some nice corned beef pasties to go with salad later in the week too.

    tonight we're having breaded haddock with minted new potatoes and salad. tomorrow will probably be the pasties, chips and salad. friday, im thinking chicken and butternut squash risotto.

    we've gone back to shopping at aldis due to soraing prices at tesco - money seems to go so much further here. their fruit and veg specials are amazing - packs of cherry plum tomatoes, spring onions and gem lettuces 59p, avacadoes 59p each - summer is here!

    im taking inspiration from the salad carts you get at places like morrisons. so ive cooked some (out of date :o ) cous cous which i have chilling in the fridge, and am going to add some chopped apple and some mandarin to my coleslaw to make a type of florida salad :drool:

    One tip I was given when on holiday in Cyprus and the temperature hit 40°C was to eat your main meal in the middle of the day and only have a light meal in the evening.

    I was very surprised to hear this, but it works. Don't know about you but at the end of a hot day I usually feel drained and not very hungry - and yet I found that a proper lunch even in the hottest part of the day is easy to eat.

    If you think about it - most people in hot countries have their main meal in the middle of the day don't they?
