Thanks for bumping this thread. I have been eating BBQ'd anything plus salad for at least 2 weeks now and was getting a bit stalled too. Last night mr newleaf asked (*begged*) for pasta instead! I like the idea of the Greek Salad Frittata very much and I've got everything in so we'll be having that tonight, Brilliant! :beer:Official DFW Nerd No 096 - Proud to have dealt with my debt!0

Tonight I'm roasting a whole chook which will do for a couple of days. With it we are having roasted veggies (red onions, peppers, courgettes, sweet potatoes and garlic and mixed herbs and olive oil) which again when cold I chop up and put up in a quiche or frittata if there are any left over and instead of gravy we have tzatziki which in summer I tend to put alongside most things like turkey lamb or fish as well as chicken.
We also eat a lot of chicken "mealy" salads and my absolute favourite which is greek salad.0 -

It sounds really delish, but I'm missing too many ingredients to even attempt it tonight. Essential ones like apples and mint!!!:rotfl: :rotfl: The mint I've had growing in a tub has gone over from lack of water, now I'm really annoyed I'll have to buy it!You never get a second chance to make a first impression.0 -

Thats a shame. I bought mine for about £2 from garden centre and it's doing well, but I need to water my herbs every 2nd day ATM. I'd buy a plant again, not the prepacked stuff.

I'm hoping it'll come back again! It's just a bit tired and tough from being left to dry out too much! This hosepipe ban I'm under means I concentrate on the ornamental baskets and tubs, but I should have remembered the mint!! There are three different kinds in there!!You never get a second chance to make a first impression.0

Another easy food for hot weather is coucous. Use it as a main meal.
Gently sauteing some vegetables, smoked sausage, chickpeas and herbs and mix through some coucous and add hot water or stock. Five minutes later you have a delicious tasty meal or if prefer make couscous separately then mix in sauted veggies and smoked sausage or prawns or Tuna.

How do you make Frittata?
Enjoying this poast, as it's got good ideas for summer meals.
However, I always end up having to ask stupid questions about how to make basic stuff.:o

Fritatta is like a flat omelette- put veg etc in frying pan and heat then add beaten eggs around the filling and stir around till it cooks.
You can pop it under a preheated grill for a few mins to cook and brown the top - and then it puffs up like a souffle.

When we get fed up of salad (& OH needs a more solid meal due to health) I've been making sort of rissotto things since it only needs the hobs on for about 10mins. Tuna & Apple rissotto is the current favorite.Still wish I could buy a TARDIS instead of a house!0
