mine's a little adhoc...It's just how I cook
Dice an onion
dice a carrot
slice or quarter 8 or so mushrooms
cube two chicken breasts
some curry powder or curry paste
juice 1/2 a lemon
4 cups chicken stock
2 cups of rice (i use basmati)
Tin of drained chickpeas (optional)
3 chunks of frozen spinach (optional)
gently saute the carrot and onion for a couple of minutes, add the chicken and saute for another 2 minutes or so.
add curry powder or paste. Mix through thoroughly
add mushrooms and rice and saute for a further minute.
Add chicken stock, lemon juice, chickpeas, spinach.
bring to boil. Season.
AT this stage you can gently simmer on stove, put into oven proof dish and cook for 40 minutes or until all liquid is absorbed or put into SC and leave for 3 to 4 hours or until all liquid absorbed."A banker is a fellow who lends you his umbrella when the sun is shining, but wants it back the minute it begins to rain." Must put my oars in I LOVE SALAD.
Made a fab one the other day with LOTS OF LETTUCE, tomatoes, spring onion, cucumber, peppers, sliced mango and big fat juicy prawns. Then I drizzled over a dressings made of walnut oil, raspberry vinegar, ginger, lemon juice, mustard seed, honey, chives and lemon thyme.mmmmm!!!:)"A banker is a fellow who lends you his umbrella when the sun is shining, but wants it back the minute it begins to rain." I'm one of those cooks who rarely keep strictly to a recipe, but for some strange reason I have to have one to deviate from, if you know what i mean!!:rotfl:You never get a second chance to make a first impression.0 -

I'd love to sit down and eat that, I bet it looked lovely ... but the only things that I could eat out of that lot are prawns, a bit of tomato and lemon juice.

Sour cream potatoes with turkey stripes and salad
Fry turkey stripes in a pan with salt, pepper, oregano and basil until golden brown.
Boil charlotte or baby potatoes with the skin.
Mix sour cream and herby cream cheese together and add salt, pepper and fresh chives, voila, a nice sour cream dip for the potatoes and the turkey. And it's cold.
Serve with mixed salad (iceberg lettuce, cucumbers, tomatoes, carrots and raddish) topped with olive oil and salt and pepper.
It's a simple meal but really refreshing...0 -

Yeah me too. Most of my meals I make up as I go along, but when I'm lacking inspiration or I have an ingredient that I want to do something new with, I go online and do a search. Then I play with the recipe. Mainly because I never have all the ingredients available.
