    There was lovely recipe in the Good Food mag last summer / summer before for an omlette / frittata made with the sort of stuff you'd use in a Greek Salad i.e. black olives, feta, green pepper and baby toms. It was lovely - served with new pots cooked with fresh mint from the garden.

    I came on here to start this thread myself lol, some great ideas here already.
    I get so hot, so dense food is pretty much out for me really, no more bangers & mash served here as the weathers getting hotter!

    Spanish omelette isnt bad for summer
    Chicken thighs/ quarters marinaded with the jacket salad combo
    grilled fish, pasta, or couscous
    roasted veg galore then can go into couscous for luches at work

    MOre ideas though please, I struggle to cook in summer!

    chicken and mushroom pilaf served with fresh apple and mint salsa

    roast chicken tortilla wrap with honey and mustard dressing

    lemon and prawn pasta

    hm pork apple and blue cheese burgers with HM coleslaw

    Nicoise salad with toasted HM olive and garlic bread

    prawn, feta and baby tomato quiche with lemon yoghurt baby potato salad

    Courgette omlette

    fresh mint ice cream

    raspberry tiramisu

    fresh fruit salad with fresh mint syrup

    Quite often don't get as far as pudding :)

    I'm still eating 'proper' meals but later in the evening and after a day of eating much lighter things. Doesn't exactly fit in with the 'breakfast like a King' rule, but works for me.

    So today I had for breakfast a celery/carrot/apple juice, done in my 'new' juicer from freecycle, lunch was a lo-cal prawn sandwich and grapes, all day long I drank litres of sparkling water, and for tea now it is cooler, I has a massive thai prawn and vegetable curry with noodles, packed with fresh veg inc. courgette ribbons, pepper slices and torn-up oyster mushrooms..... all really cheap because the supermarkets don't want veg sitting around on the shelves rotting in this heat!

    lol... I'm not the biggest fan in the world either - it has to containg exciting veg to tempt me!!

    i hate salad also.

    and gonna hate me for this, but the only time i eat lettuce is when it is in a big mac.i just don't like salad.
