2 questions: Spanakopita/clotted cream

I was gifted a sort of diy cream tea for Mothering Sunday (outrageously expensive for what it was, but that’s a different issue). Despite ladling huge unhealthy amounts of clotted cream onto the scones, I have half a container left over. What can I do with it?
And spanakopita. Can I bake it a silicon mould or is it best to stick with a metal baking tin?

I believe you can freeze clotted cream although only for a few months, maybe freeze in scone size portions for another time.Life shrinks or expands in proportion to one's courage - Anais Nin4

It's been a few years since I made it but clotted cream cake? The first one I googled was this one which looks to be easily halved if you have a loaf tin or similar, I'd also substitute in vanilla extract as I'm too cheap to buy real vanilla.

It does freeze but goes a bit grainy.
Lots of recipes on the roddas webpage. I make shortbread and fudge with leftover or excess clotted cream. Just makes it last longer.
Also I use silicone for all sorts, never had an issue, so I'm sure it will be fine.4 -
I'm astounded at the thought of left over clotted cream. I didn't think that was possible.
