The links on that page:

Go to Settings > System Updates

are not available on my phone.
And when I go to their country specific security patch webpage, there is no entry for the G7 power, so I assume
they do not include models not being patched, on that page.

Does that mean it's unsafe to use? Probably not.

Would I access my live Google or Microsoft accounts or my email accounts or my banking accounts with it? Absolutely not. 

Depends on your attitude to risk and your ability to mitigate it. Because I can do something to make my mobile devices more secure I choose to do so.

Do other factors come into play when deciding whether or not to use a phone without security updates?

For example, are there some apps you would use over mobile data but not over public WiFi?

I've found the same on my G7 Power.
The Android version is 10, and it says that the OS is up to date.
I believe there are Android versions greater than 10, so it looks like the OS is frozen at the time of the last security patch.

I personally don't ever use public WIFI for security reasons. You won't get any more updates and would best to think about getting something more secure. I know it's a pain and we shoudln't have to.
