Transferring 2023/24 fixed Virgin ISA due to mature on 2 January?

We both have Virgin Money ISAs due to mature on 2 January 2025. Both are for the full £20k year's allowance taken out on 2 January 2024. We haven't had any communication from Virgin to date and realise it's only a week off now. This is the first time we both wish to keep the money in an ISA wrapper so am a little unsure of the rules but am aware there are some hoops to jump through.
We both have maxed out this year's ISA allowance (again fixed with Virgin Money and not maturing until later in 2025). I guess this is irrelevant though.
I see Virgin are offering one of the best fixed rates again at the moment and we are keen to take advantage of this if possible before interest rates potentially start falling. Is it possible to secure this rate now and ask Virgin to simply transfer the existing ISA on 2 January or do we have to wait until the day it actually matures? Just wanting to get all my ducks in a row so to speak (and not break any ISA rules in the process).
Any pointers would be gratefully received and apologies if this has been asked a million times before!
