Ryanair flight expenses - Vat registered receipts?

We successfully claimed for compensation for a 15 hour delay and then eventual cancellation for a flight in September. We have been trying since then to claim for the expenses part of that trip as we took a taxi back home (10 mins away from airport) and back again rather than sleep on the airport floor and one meal at the only cafe at the airport that was still open (before we went home) I finally, after many many emails, had a reply today saying the receipts I have produced are not VAT registered and itemised receipts?? What nonsense is this? The taxi fare shows from the airport to home, surely that is itemised?? The meal shows the meal and the airport?? How do I get the VAT on them?

The airport cafe is going to be VAT registered, did you eat in or takeaway? If the later was it hot or cold food? What is shown on the receipt? Is it the till receipt or the card machine?0 -
There were two different taxi companies, I've just realised one does have a VAT number on. The meal receipt was a receipt from the bar/cafe inside the airport which also does have the VAT on! This one doesn't
