joedenise said:@PipneyJane - thanks for the info re coconut cream - I've got a block in the cupboard (unopened) as wasn't sure how to make it into coconut milk! I used to use it regularly years ago but not used recently! Will not be using that up and will keep in the fridge once I've opened it.
Do you think it would work diluting it with double the amount of water to make it into "Light" coconut milk? It's what I currently do with cans of coconut milk - pour the coconut milk into a jug and add a can of water to it and give it a good stir. I then freeze it in silicon muffin trays and then once frozen transfer to a plastic bag to use as and when required.
Frankly, though, that sounds like too much work for me. I normally just chisel off a lump from the block and add that straight to the dish that I’m cooking, adding additional liquid if necessary.

Hey gang, I've been a bit MIA and haven't really been keeping my eye on the budget, as I'm managing to keep it where it needs to be. Apart from when I have to get bulk buys or cat food.
I've just called over to check the recipe collection for something. So @elsiepac thanks and please put me down for £120 as usual

Thanks for the suggestion @PipneyJane! I've never used a block of coconut before but I will definitely get some. Not only is it cheaper than 100% coconut milk you can use as little or as much as you like. Winner!

Morning guys
Thanks for the coconut cream tip @PipneyJane. Haven’t bought this for ages as Lidl’s don’t keep it. I am sure Mr T or Mr M does so will get some next time I’m passing. Like you I forgot to do my Lidl’s app on about £120 worth of shopping because I was at the main till and forgot. So frustrating. I always use the self service ones now so I don’t forget.
I know this is a little controversial as they don’t have to employ so many staff.
Anyway, a few spends to report.
Called in to Farm Foods on the way back from a walk and picked up some badly needed loo rolls.
Could only carry one pack of 18 so will get a large supply when I have the car and that way again.
Hopefully they will be sending round their vouchers soon as a large shop called the ‘Food Warehouse’ has opened nearby. Think it belongs to Iceland. They won’t be keen on the competition.
£6.99 for the loo rolls
Today had a lengthy trip to Lidl’s and bought a few of their Christmas goodies for present’s.
Different budget.
Spent £45.20 on normal household items.
Had another fruit and vegetable box for £1.50
Free large bag of apples c/o the app and discounted Greek yoghurt so I bought 4, bread, mushrooms and sourdough crumpets.
Had to stock up on toothpaste, toilet items and various sauces and teabags. 2 x large cheese and savoury biscuits.
Only had to buy potatoes and tomatoes extra
Total spend this week £52.19
Total so far £243.35/£400
Have a good day everyone
The sun is shining here in Somerset

Made a mistake @elsiepac sorry, it should be £150 not my older budget of £120, as I forgot I also included cleaning and toiletries.
Though I don't often need anything because I have bulk bought fabric conditioner, hand soap, and toilet rolls. So won't need to repurchase til next year. Obviously it will be an expensive month when they all run out.
My month starts tomorrow (13th), til the 12th.GC Jan £101.91/£150 Feb £70.96/150 Mar £100.43/150 Apr £108.45 app/150 May £149.70/150 Jun £155.15/150 July £85.95/£150 (includes food, toiletries and cleaning from 13th to 12th of each month. £48.57 spent here, so far. I'm wondering if I've included everything... £2399.70/£3000 for the year to date. I would like to be under £2500 ready for December. I shall need milk, and possibly butter, but I want to run everything fresh down to nothing before buying more.
Aha! £1.30 for extra eggs to be addedSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
OS Grocery Challenge in 2025 I am at £1286.68/£3000 or 42.89% of my annual spend so far

sarahj1986 said:MissRikkiC said:@sarahj1986 if you can get to £300 then my £500 budget is considerably worse than I thought!Husband spent a further £16 at Tesco yesterday on bits of stuff for burgers as we had a relative staying over, plus some fruit for the children. I don’t think he actually got much at all, like buns, cheese, bacon and pears! Surely there has to be more than that somewhere.I made a large chili on Friday night for 8 of us, used approx 400g pork mince in total and 3 tins of beans, 2 tins of chopped tomatoes, so much veg to bulk it out. The whole lot was polished off and all the children (4of them in total) ate it with yogurt flatbreads and rice. Including the flatbreads I made, I worked out that it was still less than £0.90 a portion which I actually thought was a pipe dream these days to make a meal for under £1 per portion! Pleased with that£4.74 spent
needed bread, apples, grapes, apple sauce.£125.73 left
I need to get milk and eggs tomorrow (as we’ve used most of the milk and the last of the eggs today)
needed eggs, milk, ham and my daughter requested strawberries. When it comes to fruit I let them have whatever they like so I’ve got a punnet for her and her brother to enjoy as they both like them.I actually spent a further £9 on Christmas treats. Morrisons had Ferraro Rocher £5 and Terrys chocolate orange for £1 so one box of FR and 4 Terrys 2 mint and 2 orange. They are stored away. I’ll add that to December
£119.43 left
(£9 December spend to add):money::rotfl::T7
