Forgot to add that the courgette fritters mixture makes 4 fritters. Also, if I don't have courgettes, I'll use frozen sweetcorn instead & I have used frozen peas on occasions.

Sorry, everyone, I think I'm going to have to sit this one out, everything has gone a bit pear-shaped! Last Saturday OH went for a short run - and didn't come back. Instead he got a free ride in a helicopter - the Air Ambluance - which sadly he has no memory of. For a reason as yet unknown, his heart had stopped; luckily in front of an off-duty paramedic (what a hero!) and beside a defibrillator. For several days he was in Intensive Care and we had very little idea whether he'd make it or not; needless to say the kids (and partners, and his twin brother & nephew) all rushed back to the mothership. Several of them are still here. I have less than no idea what I've spent on food this week... but the good news is that he's out of the ICU and on the Cardiac Care ward, doing amazingly; his fitness has stood him in very good stead.
As things settle down into what will inevitably be a new normal, I'll take up the reins again. But that will be some time away, and probably involve yet another set of special dietary requirements - not in the least bit begrudged!Angie - GC Jul 25: £225.85/£500 : 2025 Fashion on the Ration Challenge: 26/68: (Money's just a substitute for time & talent...)8 -
Oh my @thriftwizard. So thankful that your OH is out of ICU. This is definitely not the time to be worrying about staying with in a food budget. How great that the paramedic and defibrillator were there. Sending lots of ((((hugs)))). Don't worry about posting any costs at this time - just keep us informed how you are doing.6

My DH had an episode before Christmas and the NHS were fantastic. His was not the stroke we thought, it was a mis-firing brain known as a global transient amnesia. Such a reliefSave £12k in 2025 #2 I am at £4863.32 out of £6000 after May (81.05%)
