Is there a law that prevents you from booking a hotel stay >30s as a single stay ?
I was playing around with pricing and couldn't seem to get anything over 29 days ..

Negotiable with the hotel. Terms would need to be agreed.0

It may also depend on the country. Some countries have weird and wonderful rules. Tunisia, for example, will allow you to rent a place for 364 days. Then you must leave the country. You can literally come back two days later and start all over again! I only know this because my friend was trying to persuade me to move there last week. Other countries do limit hotel stays. Another friend manages hotels in Greece, and there's a point at which (and I think she said it was a month) at which the "licence" to be a hotel is rescinded and they have to operate different rules as a rental let rather than a hotel - and its impossible to be hybrid, they have to be one or the other. That may only be some parts of the country though - not sure. Mexico, on the other hand, will let you stay as long as you have money!0

Thatcher managed it.

All shall be well, and all shall be well, and all manner of things shall be well.
Pedant alert - it's could have, not could of.0 -

I believe that some US States class short term vacation lets being up to 30 days. Anything above that falls into a tenancy category and certain rental rights would then apply, something obviously a hotel won’t wish to entertain.0

Certainly in some places you may get certain rights as a tenant if your stay exceeds a certain threshold on a single booking which clearly a hotel would want to avoid.0 -
Depends on the country/state.
Some have 28 day limits, some have 30. In the USA, some states limit stays above 28 days in hotels.
There are extended stay type places that you can use in some countries such as the USA.
The reason they limit in many places such as USA states, is because tenants have rights and after a month you become a tenant so they don't want to risk anything coming as a result of that.

Certainly possible in Thailand, and at very good rates. Best to negotiate with hotel direct.0

Check your insurance too. Most have a maximum trip length that is less than that.
