Sky Ultrafast Plus Broadband - thoughts?

    Ah, no, I wouldn't need that.
    So it's currently looking like a choice between Plusnet and Sky.

    Plusnet appears to be a 24 month contract - Sky 18 months.
    Plusnet is £33.99
    Sky is  £33.
    Sky offer a faster minimum speed guarantee

    I'm guessing both Sky and Plusnet speeds would be the same, regardless of which I go for? (both the 500 Mbps deal).

    Yep, exactly the same which should be the maximum. The only other thing to check is the T&Cs for price rises mid contract. The Sky router I've found to be more than adequate and has 4 ethernet ports, I don't know about the Plusnet one.

    Also, I'll need to find out how long it takes them to connect - I work from home, so it needs to be a no-fuss crossover, without paying too much to TalkTalk before it's disconnected.

    If the phone number you have with Talk Talk is unimportant ,and you won’t be taking a phone service with FTTP , or if Sky provide one , it’s not required, then there is no ‘connection’ between the new FTTP provide and the TT cease , so you would need to contact TT yourself and not rely the new provider to serve notice on your behalf.

     Its understandable to not to want to pay for both services, personally I woukd get the FTTP in first , and once it’s in and working, then cease the TT service, even if that’s a month of paying for the TT service after FTTP is available , the alternative is to give TT notice to quit , asking for  the proposed FTTP date to be the last date on TT  , but if the FTTP installation is delayed, you may end up with no service at all for a while .
