Any reason to stick with fingerprint rather than face?

Appears you prefer Android but iPhones haven't had any fingerprint sensor since 2017
I think both fingerprints and facial recognition actually present a security risk, for example if you get mugged the thief can easily use your face.

This is nonsense. If someone steals your phone and runs away, how can they steal your face?
Durr, they turn it on, aim it at your face, make you open your eyes if you don't, the FBI did it to Trump associate when they arrested him.it took seconds.

I use a long alpha numeric passcode and only use the fingerprint (with deviation) to open apps that allow me use touch ID (e.g. Signal) this provides an extra level of security that is sadly lacking, it would be good if Apple allowed TouchID to be set for all apps.

I do not use touch ID on my banking app because they replace the security of the app when what I want is for the fingerprint to be an additional level.

I feel that it is important to have at least one barrier being something only you know.

That doesn't stand up to the facts. FaceID requires an eyes open  three dimensional scan of the face. A mugger could only do that if they forced you to cooperate which would also make fingerprints and passwords vulnerable.

The risk of a fake positive from a fingerprint sensor is between 1 in 20,000 and 1 in 50,000 depending on the sensor. Compare that to less than 1 in 10,000 for a four digit PIN

You are correct to use a long alphanumeric password. Coupled with real FaceID and Stolen Device Protection turned on, that's about as secure as you can get.
Well it does, the FBI did it when arresting, but are you saying a criminal who attack you with a knife, makes you give them your wallet and phone etc, but you having provided those you are not going to open your eyes if requested to do so under threat of being stabbed?  Just check out the video on YouTube, I have seen at least three, I suspect that US authorities are advised to do it.  I think speed is the issue, one could delay and fumble with a code, you give them a fake code, change it by one digit and pretend to be flustered.

I will never use FaceID, and not use fingerprint to unlock phone, just non secure apps like signal.

Strange, I have never been mugged by the FBI. Even so, I am not an associate of Donald Trump or a criminal, so have nothing to hide on my phone.

If someone held a knife to me, it doesn't make a difference if I have face ID or a passcode, most people will just give them the code.

Anyway, these scenarios are so extreme it doesn't bear dwelling on. I know if I misplaced my phone, or someone just snatched it from my hand, Face ID is more secure than a 6 digit code.

and that keeps it open for a few minutes ...

the  feds were probably  ready with a  fast USB  device to suck the  data off the phone ... something well beyond  your typical mugger

If you get mugged, you can also be forced to divulge your pin number, mum's maiden name, the name of your cat etc.

What's your point? fingerprint and facial scanners increase security.

Criminals worldwide used EncroChat phones. These were phones thought to be totally secure with its erase feature
until it was cracked by French and Dutch police
A "erase all " feature was available, where a certain PIN inputted to the device via the unlock screen would erase all data on the phone.

EncroChat phone were able to boot in two modes. When only the power button was pressed to turn the handset on, they booted into a dummy Android home screen. But when the handset was switched on by pressing the power button together with the volume button, the phone booted to a secret, encrypted partition which facilitated secret communication via EncroChat's own servers
