What a palaver at the gym! You sound like you’ve got a lot of cafe’s in your area! Sounds like a nice quest. I would join you (in my area of course) but then again, I would eat too much cake - something I should avoid if I want to lose this pesky stone (and a bit)!
    Yes, it's definitely a cake risk 😂

My local council gym only does 1st to last day of the month which means if you pay on the 28th you pay again on the 1st.  I suspect they are working with a very old system.

The thing is - the expectation that people will check emails at a weekend is the problem here isn't it. My view would be "why on earth would anyone expect that people are checking work emails over a weekend" so the fault is squarely at the door of the person who chose the weekend to arrange a meeting which then didn't give those who don't (quite correctly) work over a weekend to attend. Working weekends should be considered to be an addition for the majority of those working in "9-5 type" environments, absolutely not the norm!

I should think a celebratory gin for no longer having to deal with that person is absolutely in order - IMO the only assumption that can really be drawn from the whole fandango is that they are presumably immensely unconfident in their own ability to do their job if they really have a need to be actively working to point-score against others to quite that extent!
