Prefer s/c if going for a month more relaxed and chilled you have settee dining area fridge,washing machines irons etc. Plenty of s/c on trivago then book your own flights on skyscanner .0

How much more expensive is it than you thought it would be? I would be looking at Airbnb in the area you wish to visit, use 'whole unit or apartment' something like those words come up. Don't forget to include transfers to apartment1

OP, we did New Zealand about 10 years ago. From what I can remember it was about an 11 hour flight to Hong Kong, we had a stay there for a few days, and then about another 11/12 hour flight on to Auckland. I enjoyed the flight tbh. Even if I hadn't, I'd still do it again, because the destination is absolutely worth it. We went early January and had better than usual weather. If you've not been before, I'd put that top of my list.1

Definitely book things separately rather than as a package. Not only will you get a better price, but you'll also get a much better equipped apartment too.
Ryanair have flights to Alicante and Malaga on sale already, Easyjet go on sale on Thursday this week (21st).
If you book a flight to Alicante or Malaga, outside of xmas and new year, you should be able to get one for about £150pp including a suitcase. You could get a one bedroom apartment in Benidorm, Benalmadena or Torremolinos for around £1000 with a kitchen, washing machine and wifi. If you go to quieter resorts like Calahonda, Calpe, Albir, Estepona or even Nerja you'll probably find something a little cheaper.
You'll need decent travel insurance, and check that it covers you for a long stay as not all do, and transfers are easy to book using someone like Hoppa, Shuttle Direct, Holiday Extras etc too.
Whilst the Canaries might give you a better chance for warmer weather, it is usually a lot more expensive. A flight with baggage is likely to be £200-250pp, and you'll be looking at around £1500 for accommodation as a minimum as the winter months are actually peak season for the Canaries.
